Cookbook Full of YUM

I get really tired really fast of typical American fare for dinner, so I have lately been trying the Mediterranean goodness in this cookbook I got awhile back as a gift. I have to say, three recipes down and I will not rest until every one of them is dog-eared. I made a golden lentil soup on Sunday for guests that had the most amazing flavors. A simple angel hair pasta dish with tomatoes, pine nuts and feta blew me away. I even tried an eggplant recipe for the first time - eggplant tagine. Eggplant is an acquired taste and needs to be cooked correctly to bring it any merit so I'm not sure I did it right, but the dish was chock full of all kinds of vegetables so it was still good. Even though I'm not an eggplant fan yet, I am encouraged to try more of it in her other recipes. Also, go eat at one of her restaurants if you're in Southern California. Heck to the yeah yum.
